what's for dinner? Week something

I've actually planned meals for the week. Surprise, surprise! Matt is one lucky guy.

Monday: chicken tostadas
Tuesday: SF melts and sweet potato fries
Wednesday: Chicken, Black Bean & Corn Stoup {new RR recipe} with Pancheri Cornbread
Thursday: leftovers and BYU vs. TCU Go Cougs!!
Friday: Honey Nut Chicken Strips {another new RR} with french fries
Saturday: nothing planned; hopefully someone will take me out to dinner {hint, hint}
Sunday: cranberry pork roast with mashed potatoes and roasted asparagus

i heart martha

It's been well-documented. I love Martha Stewart. I got the October issue of Living yesterday and was a bit disappointed in the "Good Things" section, which is usually my favorite. Well, Martha redeemed herself with several recipes. When I can eat dairy again, I'm definitely trying these:

What's for dinner? Week 21

I haven't posted one of these since December, and that just may be the last time I made an actual meal plan and went with it. Poor Matt. Now that I don't feel so terrible after work, my goal is to make dinner every night again. You'll notice some of these are pretty simple. That accomplished my two-fold goal -- saving money on our grocery bill and not having to slave away in the kitchen when I finally get home from a stressful day at work.

Sunday: angel chicken and steamed broccoli
Monday: rice casserole and corn
Tuesday: italian baked chicken and cheddar bay biscuits
Wednesday: homemade pizza and fruit salad
Thursday: leftovers
Friday: dinner with friends
Saturday: italian chicken chili with homemade croutons and parmesan popovers

I'm also making these for my class today and want to make these sometime this week too.

Thursday: chicken parmesan and (Matt's favorite) frog eye salad

Saturday: bruschetta chicken
Sunday: balsamic pork and tomato with green rice

What's for dinner? Week 19

I've been a huge slacker in the meal planning/cooking department. I don't even want to talk about the fact that I cooked the same meal 3 days in a row last week. Yes, that's re-cook, not even reheating leftovers. This week will be better.

Monday: um, nothing? I have NO groceries.
Tuesday: black bean stoup and cornbread
Wednesday: Lisa's chicken fajita pizza
Thursday: San Francisco Melts
Friday: chicken stir fry
Saturday: no cooking - Christmas party!

What's for dinner? Week 18

Last week's meals were great. The All-Stars? Pancheri cornbread and the bread bowls I made with the chicken corn chowder. Yum. This week, I'll be taking it easy while we get everything ready for Matt's parents and sister, who come in on Saturday.

What's for dinner? Week 17

It's been one of those weeks. Or two weeks. Whatever. I basically didn't grocery shop or cook at all last week, so there will be a lot of overlap here. And, yes, I realized this is a heavy chicken week. I promised Matt I would switch it up next week.

Tuesday: Rosa's Taco Tuesday special
Wednesday: taco soup with Pancheri cornbread
Thursday: chicken parmesan with caesar salad and cheesy garlic bread

October Love: Spooky Food

My SIL, Kristin, requested spooky appetizers for a swanky Halloween party she's attending this weekend. That reminded me of my love of regular food turned spooky. Thursday: Mexican lasagna (dinner with Jen & Shayne!)
Friday: italian baked chicken with cheddar bay biscuits
Saturday: San Francisco melts
Sunday: cajun chicken linguini with parmesan popovers

I made each and every meal I said I would last week. I never thought that would actually happen.

Monday: cheesy chicken and brown rice
Tuesday: dinner at Jen & Shayne's!
Wednesday: I'm flying solo and will just eat something simple
Thursday: BFD - swedes
Friday: chicken parmesan
Saturday: San Francisco melts
Sunday: chicken tostadas

As far as treats go, I'm thinking of making all (or some) of these: brownie bites, whole wheat zucchini muffins and/or banana bread. Yum!

{I arbitrarily picked the number 12 to start counting the weeks. I want to have them distinguished, but I really don't want to go back and count how many times I've already done this.}

Monday: creamy garlic penne
Tuesday: BFD - blueberry pancakes and strawberry smoothies
Wednesday: BBQ mini meatloaf
Thursday: Matt's chicken enchiladas and spicy creamed corn - we're having friends over!
Friday: bruschetta and cheese stuffed chicken
Saturday: Brookie's baked ziti, vegetarian style
Sunday: plucket (a Stratton family Conference tradition!) and

I've got a lot of new recipes this week. I've decided I need to be better with my food budgeting and want to try out a few cheaper recipes that I can add to my menu choices (if they're any good). Right now, I've included links to all new recipes in my GoogleDocs and will post them to my recipe blog if they turn out!

Monday: I wasn't feeling well so Matt made me a grilled cheese sandwich while I watched TV in bed
Tuesday: tacos
Wednesday: beef and bean chimichangas (new recipe)
Thursday: italian baked chicken and cheddar bay biscuits
Friday: creamy garlic penne (another new recipe!)
Saturday: black bean burritos
Sunday: Matt's making his famous chicken enchiladas

I also plan on making Jen's banana cream pie this week, since I was a slacker last week! I'm taking brownie bites to a little get-together on Friday night, too.

Wednesday: Breakfast for dinner: Dutch Babies and strawberry smoothies
Thursday: Stuffed Peppers {Matt's request -- I hope Beth posts the recipe before then!}
Friday: Garden Risotto {new recipe -- I'll post if it turns out okay}
Saturday: Out -- our ONE YEAR ANNIVERSARY!!
Sunday: Baked Penne with Roasted Vegetables {another new one} and Cheddar Bay Biscuits

I usually like to make some kind of treat once a week, too. This week, I think it will either be brownie bites or banana cream pie...

We are moved in enough to start cooking again. I'm so excited -- we have eaten out way too much in the past month and are both ready for home-cooked meals again!

Monday: oatmeal cookie pancakes
Tuesday: italian baked chicken and multigrain biscuits
Wednesday: taco salad
Thursday: beef dip sandwiches (Matt's making them!)
Friday: parmesan-dijon chicken, salad and glazed carrots
Saturday: BYU FOOTBALL with chicken enchiladas
Sunday: roast and potatoes and carrots (and maybe homemade rolls, if I get crazy!)

Matt and I are trying to use up all the food we have in the freezer/pantry in the next few weeks so we don't have to move it. Between that and our crazy schedules, meals will be interesting until then.

My meal-cooking sort of derailed last week. I don't really have a good explanation for why, but hopefully this week I actually start cooking. Matt might divorce me if I don't.

Tuesday: Carmelized Garlic Chicken
Wednesday: Pulled Pork Nachos
Thursday: Chimichangas (using leftover pork)
Friday: night out with Jen!
Saturday: wedding reception = free food
