What's for dinner?

Planning my menu worked pretty well last week. We missed one day (Thursday) because we had to meet with our lender, but posting the list for the world to see kept me accountable. I definitely didn't feel like cooking on Sunday, but I still did it. On to this week:

Monday: Italian Baked Chicken with glazed carrots and garlic pull aparts {the meal I should have made last Thursday}
Tuesday: Barley Soup
Wednesday: Apricot Chicken with brown rice {stolen from Jen!}
Thursday: Homemade pizza with green salad
Friday/Saturday: I'm getting PRK and will be mostly out of commission, so it's up to Matt to feed me
Sunday: Mega Veggie Lasagna with Parmesan Popovers {popovers stolen from Jen and I made and froze the lasagna a few weeks ago}

Ya'll will not be disappointed with the Apricot chicken... the easiest, yet tastiest meal out there. Least I think. I'm lovin this recipe swap thing we got going on Dude!
