So, it's been a long time since I've had a real post. Don't fear. I'm back. Without further ado:
This weekend was a lot of fun. Matt and I headed up to Oklahoma City after work on Friday. I have wanted to visit the Oklahoma City Bombing Memorial for a long time and convinced Matt to make a quick trip with me. Friday night was just spent driving. Oh, and watching a terrible, cheesy movie on MTV after Matt fell asleep.
Saturday was a beautiful day. I don't know if you've heard, but we've had 3 weeks of straight rain here in Texas and I was getting sick of the overcast skies and daily downpours. Saturday was a clear, warm day. Awesome. Matt and I headed over to the Memorial and Museum as soon as it opened. We spent almost 3 hours wandering around. If you ever have the chance, you really need to go. I was amazed at how well-done the museum was. You start out with background on the Federal building and with what was happening that morning. Then you actually hear an audio tape of when the bomb went off. After that, it takes you through the aftermath -- immediately following the bomb, the search and recovery, all the way through the investigation and trials. They also do a great job of honoring the victims. I can't do it justice here in this small blog, but I'll still heartily recommend it. After the museum, Matt and I went to Bricktown (where the Sonic HQ is!), then stopped in Norman on our way home to eat at The Mont. Awesome queso. Oh, we also had to drive by the OU stadium for Matt.
Sunday was another normal day, although I did seem to cook a whole lot. We started off with breakfast -- Belgian waffles with fresh blueberries and whipped cream. I intermittently watched the Wimbledon final (go Federer!) and finished preparing my YW lesson. After a lunch of leftover homemade pizza from Saturday night, we headed off to church. After church, I made this yummy dish and cooked some of the best corn on the cob I've ever had to go with it. For dessert, we had sugar-free frozen yogurt with fresh blueberries, peaches and crema fresha. Yum. Then I made yummy whole wheat zucchini bread for Monday's breakfast. How was your weekend?

The weekend was great! All the cooking was fantastic! And the Wimbelton Final was...well, what we expected!
Mandy, I'm so glad you got back to blogging! I missed the awesome up-dates of the going-ons and such. XOXO.
Looks like tons of fun... enjoy those fun trips while they last and before it gets harder to get out with the little ones! I'm jealous.
